Ingredients
  

Chocolate Cookie Dough

  • 1 cup unsalted butter softened
  • 3/4 cup white sugar
  • 3/4 cup brown sugar packed
  • 2 eggs room temperature
  • 2 tsp vanilla extract
  • 1/2 tsp espresso powder optional
  • 2 1/4 cups all-purpose flour
  • 1/2 cup black cocoa powder
  • 2 tsp cornstarch
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup crushed Oreos about 10 cookies

Lemon Berry Buttercream

  • 1 1/2 cups unsalted butter softened
  • 7 cups powdered sugar
  • 5 tbsp milk or heavy cream
  • 2 tsp vanilla extract
  • 1 tsp lemon extract or juice
  • 1 tsp raspberry or strawberry flavoring
  • yellow, pink or purple, and blue food coloring

Toppings

  • 1/2 cup white chocolate melted
  • 1/2 cup crushed Oreos or to taste

Instructions
 

  • Cream softened butter with both sugars until fluffy.
  • Add eggs one at a time, beating well after each. Stir in vanilla and optional espresso powder.
  • Whisk flour, black cocoa, cornstarch, baking soda, and salt in a separate bowl. Add dry ingredients to butter mixture in two additions. Mix just until combined.
  • Fold in crushed Oreos. Chill dough for 30 minutes to ensure thickness when baked.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop dough into 1/4 cup portions and bake for 12–15 minutes, until edges set and tops lose gloss.
  • Cool cookies fully before frosting.
  • Beat softened butter for frosting. Gradually add powdered sugar, alternating with milk or cream, until fluffy. Stir in vanilla.
  • Divide frosting into 3 bowls. Flavor and color: yellow lemon, pink/purple berry, blue vanilla. Swirl a small dollop of each color on each cookie using gentle strokes.
  • Drizzle cookies with melted white chocolate and finish with crushed Oreos.

Notes

Keep dough chilled to ensure thick cookies. Use a light hand when swirling frosting to preserve pastel tones. Frost only fully cooled cookies for best swirl definition. For a sharper look and firmer bite, serve slightly chilled. For a creamier texture, serve at room temp.
